WALNUT CARROT CAKE

Walnut Carrot Cake

10" round cake tin

Ingredients

4 Eggs
1 1/4 Cups corn oil
2 cup Sugar
2 tsp Vanilla extract

Sift
2 Cups All purpose flour*
2 tsp baking soda*
2 tsp baking powder*
2 tsp ground cinnamon*
1/2 tsp salt*

3 cups grated carrots
1/2 cup Chopped walnut
1/3 cup sultana or raisins

Method

1. Preheat oven to 350 degrees F (175 degrees C). Grease and line with paper a 10 inch round pan.

2. In a mixer, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Add in sifted flour and combine well, stir in carrots. Lastly fold in chopped walnut and sultanas or raisins in batter. Pour into prepared 10" pan.

3. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.


Cream Cheese Frosting

1/2 cup butter, softened
8 ounces cream cheese, softened
3 1/2 cups powdered sugar (sifted)
1 teaspoon vanilla extract
1 tsp lemon zest

Method

1. In a medium bowl, beat butter and cream cheese until smooth, add in powdered sugar and 1 teaspoon vanilla. Lastly add in lemon zest and beat until creamy.
